From the GirlGuide recipe book to yours... Watermelon Mozzarella Salad

1/2 of a small watermelon, rind and seeds removed and cut into 1 inch squares

1 large ball of fresh mozzarella, cut into 1/2 inch squares

7 or 8 large mint leaves, chiffoaded

Small handful of arugula, washed and dried

Juice of one lemon or lime

Healthy drizzle of good olive oil

Sea salt and fresh cracked pepper

 

1. Combine the first four ingredients and toss

2. Dress with the lemon juice and olive oil

3. Season with salt and pepper and toss one final time
